THE ROUTE

Gastronomy and Pulque in Tlachichila: A Rural Hacienda Experience

Day 1: The Tlachichila Hacienda Experience

A day dedicated to rural life and the traditions of the Zacatecan countryside in a historic hacienda within the Tlachichila community.

Activities: At 12:00 pm, we depart from the municipal seat of Nochistlan toward the Tlachichila Hacienda. Upon arrival, we are welcomed by Don Adolfo, the site manager, who offers a welcome and shares a brief historical explanation of the hacienda and the tourism project developed here.

Subsequently, we take an exploration tour of the hacienda to see its main areas and most representative spaces. Later, we participate in food preparation using local ingredients. The activity is done alongside traditional cooks who share regional recipes and techniques. Around 3:00 pm, we enjoy the meal prepared during the experience.

In the afternoon, we take a walk through the agave plantations, learning about their importance in the region with time for photography. The day continues with a tasting of aguamiel, the fresh sap obtained from the agave. Afterward, you can choose between various ecotourism activities such as fishing, hiking, horseback riding, or cart rides around the hacienda. At nightfall, we share an evening around the bonfire, telling stories, legends, and anecdotes of the region. The experience includes dinner and a mezcal tasting. Finally, we prepare to rest inside the hacienda, living an authentic country experience.

Day 2: Photography and Pulque at the Hacienda

A second day dedicated to discovering the rural life of the hacienda and countryside traditions.

Activities: At dawn, we take a walk toward the stable while the fields still hold the morning dew. There, we participate in the preparation of a traditional pajarete, a drink made with freshly milked milk and a touch of mezcal—a deeply rooted custom in the rural communities of the region.

Later, we tour different areas of the hacienda for a photography session, taking advantage of the landscapes and historic buildings as a memento of the experience. Afterward, we enjoy a breakfast prepared with regional ingredients, tasting traditional dishes made with local products. The journey continues with a tasting of pulque and curados (flavored pulque), learning about the maguey tradition and its importance within the rural culture of the high plateau. Finally, we hold a closing meeting to share feedback on the stay. After saying goodbye, we begin our return to Nochistlan, concluding the tour activities.
