The Route of Pajarete and Sugarcane in Xalisco
The day begins with one of the most authentic traditions of the Nayarit countryside at Pajaretes Don Ramón. Here, breakfast is centered around the preparation of the Pajarete—a traditional social drink made with fresh unpasteurized milk, chocolate, and a touch of local cane spirit (alcohol de caña).
The morning continues at Lácteos Sara with an artisanal cheese workshop. You’ll learn the local secrets of the curdling and molding process to create regional cheese, a true gem of local gastronomy.
Next, the landscape shifts to the sugarcane fields (cañaverales). We’ll explore the cultivation process and understand the life cycle of this plant, which is the backbone of Xalisco’s economy.
The journey follows with a hands-on workshop to learn the art of extraction. Under the guidance of local producers, you’ll participate in the process of obtaining fresh sugarcane juice and taste its natural sweetness straight from the trapiche (traditional mill).
In the mid-afternoon, we arrive at the Ex-Hacienda Ocampo, one of the region’s most iconic estates. There, we’ll enjoy a traditional lunch made with local ingredients, followed by a guided tour through its historic walls and courtyards. The hacienda’s architecture and its ancient mill tell the story of the sugar industry’s vital role in the state’s development, transporting us back to an era of rural splendor.
The day concludes in the heart of Xalisco with a stroll through its Historic Center. Between its plazas and main church, you’ll experience the town’s daily life and its evolution over time, enjoying the calm of the sunset before the short trip back to Tepic.
